There is just something about eating noodles. That sudden desire for Chinese food during the lecture just before lunch. Here is a simple and rather western interpretation of those noodles. Plus, with Bare Naked Noodles and their 8cal per portion, no need to feel guilty (and it’s vegetarian <3)!
Noodles (SERVES 2):
1 confection of Bare Naked Noodles (250g drained)
10g Coconut oil
50g Red onion à la julienne
1 Clove of garlic
100g Courgettes à la julienne
50g Carrots à la julienne
30g Baby spinach leaves
2 tsp Chia seeds
5g Spring Onion
5g Sesame seeds
40ml Reduced salt dark soy sauce
On the side:
2 Rice cakes
20g Spread of choice (in my case vegan garlic and herb soft cheese)
Heat the coconut oil in a skillet at medium heat, add the red onion and chopped clove of garlic. Cook for 5 minutes, then add the courgette and the carrots, salt, pepper, parsley and chillies. Sauté the vegetables on medium heat until softened and browned. If the vegetables start to dry out, add a splash of water.
At this point add the drained noodles and chia seeds, sauté all together for 5 minutes, then add the soy sauce. Cook for 5-10 min or until the noodles and vegetables have absorbed the soy sauce. When ready to serve, add the spinach leaves, spring onion and sesame seeds and adjust salt&pepper to taste.
Top with avocado slices, sesame seeds and lemon juice.
