Easy quinoa spinach salad

For a quick and easy university lunch, or for one of those days when you just feel like eating a big bowl of nutritional veggies. Makes you full without having to eat too many calories. Easy, cheap, vegan ❤

Ingredients:
100g Red tomatoes
200g Cucumber
70g Baby whole leaf spinach
50g Cooked quinoa
1 tsp Chia seeds

For the toppings:
1 tsp Chia seeds
1 tsp Sesame seeds
1 tbsp Engevita b12 yeast flakes
5g Spring onion
Salt
Pepper
Lemon juice
Water

On the side:
1 slice of Soya and linseed bread (from Burgen)
10g of Vegan garlic and herb soft cheese

TOTAL CALORIES: 360

Uk Sainsbury (Amazon for the Engevita flakes) prices:
Salad: 0,20£ + 0,35£ + 0,70£ + 0,15£ + 0,05£=  1.45£
Toppings: 0,05£ + 0,05£ + 0,17£ + 0,03£= 0,30£
Sides: 0,09£ + 0,11£ = 0,20£

TOTAL COST: 1.95£
